Traditionally, wedding cakes are white cakes. However, most people opt to kick up their wedding cake a notch or even more so today the types of cakes that people use are extremely varied. For example, if a couple still wants to use the traditional white cake, they might decide to use different fillings. Likewise, they might keep a layer or two white and vary the other layers to provide guests more variety. The awesome thing, though, is that today the sky's the limit when it comes to wedding cakes.
A traditional white wedding cake can sometimes be a dry cake. To combat this, you will need to pay close attention to the measuring of ingredients and most especially the cooking time. Adding interesting and moist fillings between the layers can also help a white cake. Following is a recipe for a traditional white wedding cake. This makes two 9-inch round cakes. Increase for as many alyers as you want to include.
2 cups sifted flour
1-1/2 cups sugar
1/2 tsp. salt
2 1/2 tsp. baking powder
1 1/2 sticks unsalted butter, softened
6 egg whites from large eggs
3/4 cup milk
2 tsp. vanilla
The fillings that you can put into your white cake are virtually unlimited. Any type of fruit filling will work - strawberry and raspberry both are common choices. However, you will need to think about how you are storing your cake before serving. If you are using fresh berries you will want to eat your cake soon after fixing it. You can use jam fillings.
